Turkey n Taters

Quantity: serves 4?
Ingredients:
1 pound ground turkey or 3/4 cup chopped onion
chicken, thawed (I suppose
you could also use
hamburger)
salt and pepper to taste 1 teaspoon chili powder
3/4 teaspoon cumin 1/3 cup chunky salsa or
picante sauce
4 baked potatoes (size minutes, until they're
depends on how hungry you soft. turn 3-4 times while
are) [to bake potatoes, baking.]
wash well, prick 8-10 times
with a fork, then insert a
nail or chopsticks
lengthwise so it'll cook in
the middle. bake at 450 for
45-60
1/3 cup milk 3 tablespoons sour cream
1 cup grated cheese (they
suggest jack, I used cojack)
Instructions:
SautΘ meat and onion in large skillet over med. heat 5-8
minutes until meat loses pink color. Stir in salt to taste,
chili, cumin and salsa, and cook 5 min. Cut potatoes in
half and scoop out the middles. Save the skins. Add milk,
sour cream, salt and pepper to potatoes and whip until
smooth. Fold meat mixture and half of cheese into potatoes.
Spoon into skins and top with remaining cheese. Bake at 400
for 15-20 min.
Comments:
I used no cumin (didn't have any), double salsa, extra
cheese, and substituted mayonnaise for sour cream. It was
GREAT! Package claims will serve 4. I say if you want
this recipe to serve 4, use large potatoes. :) [
